Open-Faced Grilled Eggplant, Red Onion & Tomato Sandwiches with Creamy Celeriac Sauce and Bright Black Potatoes

I’m a big fan of Bryant’s books. He has really opened my taste-buds up to the flavours and wonders of southern cooking! This is another recipe from his books, which I adore. Until trying this recipe, I had never tried celeriac, and so I had no idea how it would taste. On it’s own I wasn’t the biggest fan, it wasn’t special and I would probably pas it up if offered it again… but in the sauce it was so good, perfect. I absolutely loved this sauce! It was tart and tangy and so, so good on grilled vegetables. I served this dish with the Blackened potatoes as suggested and they were also fantastic!
