Spaghetti with Chilli & Eggplant Bacon

It’s the final day of Vegan Moth of Food 2012! To wrap up I thought I’s share a really easy pasta from Pete Evans. This recipe is veganised but I didn’t have to do much to it. It’s a really simple yet satisfying meal. You have the tart richness of the tomatoes offset by the smoky lushness of the eggplant bacon and chewy pasta. This recipe uses a ready-made pasta sauce and adds red onions, chilli flakes, garlic, and eggplant bacon. The eggplant bacon is from Appetite for Reduction, which is a great recipe to get a smoky element int a dish. Perfect for all those Italian pastas that use smoke or cured meat!
