Oven Dried Tomatoes

M sent me this video a while ago and I have been meaning to try it but never got around to it until I decided to make one of my favourite pasta dishes. This pasta dish required a few really good sun dried tomatoes, which can be a little expensive, so I decided to make some using a combination of the two recipes mentioned above. The tomatoes turned out really well and had such a lovely, intense tomato flavour - perfect for the pasta! While the drying takes a long time it isn’t hard. All you have to do is schedule in some oven time, so I suggest you do it on the weekend, in the afternoon - after lunch. It was also great as I got to control what oil went into the jar, which meant it was perfect for cooking with and tossing pasta in. I’ll be making these again!
