Avocado Pesto Pasta

I love, love, love Avocado. So imagine my horror when I got to Switzerland and they were over 1.50 francs each! I look out for them when they are on special to make dips or this pasta dish. I love this pasta and I don’t know why I didn’t think of using avocado as the base of a pesto before. I find pesto can be a bit strong so the avocado mellows it out and makes a lovely creamy sauce. I try not to over do the basil and garlic so you can still taste the avocado a little. This meal is lovely served with garlic bread (also from Chloe’s Kitchen). I say served with garlic bread like it’s optional but in our house it is one of M’s most favouritest things in the world, he adds it as a side to any meal he can. I can see his whole heart light up when he sees it on the menu list for the week so there is no way I could say no, lucky I love it too!
