So, recipe two in a week of strawberry madness was cupcakes. I have made these cupcakes before and knew they were easy and tasty. They strawberry flavour in the cupcakes is very subtle, so I would recommend adding some strawberries to the ‘butter cream’ frosting. I just crush the strawberries in my hands and let the mixer whisk and mash them into the mix. This way you get the pretty soft pink colour plus flecks of red strawberry bits - divine!
