Funmilayo Fritters with Harissa & Wet Jollof Rice with Carrots, Cabbage, and Parsley-Garlic Paste

The Inspired Vegan groups recipes into meal plans and these two dishes come form Funmilayo’s Feast. Both recipes were fairly simple to prepare, however, there were a few things to organise. The Fritters had a lovely peanut taste that went well with the hot Harissa (although I didn’t make it too hot). They were very mild so carried the sauce well. The rice was a nice side but nothing too impressive until you mixed the Parsley-Garlic Paste in and then YUM! Totally worth those extra few minutes with the Stab Mixer.
