For what it`s worth: it`s never too late or, in my case, too early to be whoever you want to be. There`s no time limit, start whenever you want. You can change or stay the same, there are no rules to this thing. We can make the best or the worst of it. I hope you make the best of it. I hope you see things that startle you. I hope you feel things you never felt before. I hope you meet people who have a different point of view. I hope you live a life you`re proud of, and if you find that you`re not, I hope you have the strength to start all over again.
—Eric Roth, The Curious Case of Benjamin Button screenplay
Green posole seitan stew with chard and white beans (from Viva Vegan). Served with tostadas, avocado, lime and radishes. This is a really hearty but zingy stew. It’s hard to describe! I think it’s Mike’s new favourite stew. I use potatoes rather than hominy, as I can’t get that here. #veganfoodshare #vegan
So it doesn’t look like much but it’s super easy and super tasty, really good for the week before we move! It is Sesame Tofu (The Graden of Vegan), great tasting and super quick to prepare - no pressing or long marinating time. Djion Scalloped Potatoes (How It All Vegan), creamy Djion sauce - I could have had just a big portion of this on its own. And lastly Dried French Bean Salad (Tibits inspired). #vegan #veganfoodshare
